North Sulawesi Provincial Government through the Department of Industry and Trade (Disperindag) develop refined vinegar (acetic acid) made from coconut water.

"Development of coconut water into vinegar in South Minahasa district (Minsel), because it is a large oil producing region," said Head of Industry and Commerce of North Sulawesi, Olvie Atteng Amurang, Thursday (2/10).

Acetic acid is one of the diversification of oil derivative products that have a high enough value. Coconut water is usually only used as waste and not used by farmers, but has a number of benefits.

Section Head of Industrial Technology Research and Standardization Industry Manado Fahri Polii Ferdinand said, vinegar is a liquid produced from the basic materials of various kinds of plants are rich in starch or carbohydrates by fermentation of alcohol and acetate.

To reduce the amount of dependence on imports, the Indonesian government continues to innovate at the industry level. One of them is done by the Minister of Research, Technology and Higher Education, Muhammad Nasir, who has inaugurated an enzyme production unit with a capacity of 200 tons per year, the result of the development of BPPT and PT Petrosida Gresik. This enzyme factory also involves the results of research from Airlangga University, Surabaya.

The enzyme produced in Gresik is an enzyme produced from biodiversity or organic and does not use chemicals so it is environmentally friendly. The use of this enzyme, of course also will impact on industrial waste that will more easily decompose. Enzymes are the biotechnology of protein substances that are needed as catalysts in various industrial needs, such as for pulp processing, detergents, as well as in textile products such as clothing. Enzymes are also needed by the food industry in the production process such as cheese, vinegar and other products that require bacterial fermentation.
